How about a great blue cheese dressing to liven up a plain green salad. This salad dressing can also be used as a dip for fresh raw vegetables such as carrot sticks, celery and even apple slices. This salad dressing can also be used as a sauce for meat such as beef or on cooked vegetables. This page will teach you how to make blue cheese dressing.

To make a successful blue cheese dressing you may use any one of the many blue cheeses available on the market including Stilton, Danish Blue, Gorgonzola and Roquefort. What makes blue cheese blue is the type of mold used and injected into the cheese to create veins. This mold is called penicillium. The color of the moldy veins can be a dark blue, a blue green, greenish color, or a blue black color. Blue cheese can have a range of textures, from fresh, smooth, and creamy, to aged hard cheese similar to parmesan cheese. However using a crumbled blue cheese will make the job a little quicker.

    • Mixing bowl
    • Whisk
    • Measuring cup
    • Tablespoon
    • Teaspoon
    • 1 cup mayonnaise
    • 1/2 cup fresh blue cheese, crumbled into small pieces
    • 1/2 cup half and half or heavy cream
    • 2 tablespoons sour cream
    • 1 tablespoon lemon juice, freshly squeezed or store bought
    • 1/4 teaspoon Worcestershire sauce
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon white wine vinegar or champagne vinegar
    • 1 tablespoon fresh parsley, finely chopped
    • 1 tablespoon scallions, finely chopped
    • 1 bunch fresh chives, finely chopped
    • 1/2 teaspoon kosher salt, or to taste
    • Freshly ground black pepper to taste
    • 2 pints yellow or red cherry tomatoes, or yellow or red grape tomatoes, or all of them (optional)
  • Blue Cheese Dressing Instructions
    1. Add mayonnaise, 1/4 cup of blue cheese to a mixing bowl. Mix well using a whisk.
    2. Add half and half or heavy cream, and sour cream. Blend into the mayonnaise, blue cheese mixture.
    3. Add extra virgin olive oil and white wine vinegar or champagne vinegar to the same mixing bowl. Mix well.
    4. Add lemon juice, Worcestershire sauce, kosher salt, and black pepper to the mixing bowl.
    5. Add the herbs parsley, scallions, and chives by folding in with a spoon or spatula.
    6. Add the remaining 1/4 cup of blue cheese by folding into the blue cheese dressing carefully.
    7. Can be served with green salad, potato salad, tomatoes, etc.

    1. Try using different types of cream, light, low fat, heavy cream, half and half, for various consistencies and different types of blue cheese varieties to vary the flavor.
    2. An alternative use for this dressing is as a dip for sliced fresh vegetables like celery, carrots or cucumber slices. Also can be used as a sauce for potato salad, on vegetables, or meat such as beef.
    3. Add an additional amount of blue cheese after blending or mixing in a bowl for a chunky blue cheese dressing and added blue cheese flavor. Add the blue cheese carefully so the cheese will not be mashed into the dressing.
